My kids love cobbler! I take it to a lot of functions. Church, friend's houses, family get-togethers. That is why I am so excited about this recipe. Cobbler is that staple southern dessert that is sure to please every sweet tooth at the gathering, but bringing home that ooey-gooey casserole dish with remnants of left over baked on fruit is no fun at all. From now on I won't have to. I'll be taking cobbler bars instead. Yay!
Oh, and as far as I know, you can make these bars out of most any berry. I am not sure about using peaches or fruits that are heavier on the juicy side. I would probably just stick with cleaning the pan for that one.

BLUEBERRY COBBLER BARS
Preheat Oven 350º
Prepare baking pan by covering with aluminum foil. Spray foil with cooking oil.
INGREDIENTS FOR CRUST:
1/2 cup (1 stick) butter
1 cup all purpose flour
3/4 cup oats
1/2 cup white sugar
1/4 cup brown sugar
1/2 tsp cinnamon
1/4 tsp salt
1 large egg yolk
melted butter
First things first:
Preheat oven to 350° Prepare baking pan by covering with aluminum foil.
Spray foil with cooking oil. Stir together for the crust:
1/2 cup (or one stick) unsalted melted butter,
1 cup all purpose flour, 3/4 cup oats, 1/2 cup white sugar,
1/4 cup brown sugar, 1/2 tsp cinnamon, 1/4 tsp salt, 1 large egg yolk and melted butter.
Set aside 1 cup of this mixture, but add 1 tablespoon brown sugar to it. This will go on top of the blueberry filling.
Press remaining mixture into bottom of covered pan.
For the filling:
Toss together 2 cups fresh blueberries, 2 tablespoons lemon juice, 1/4 cup white sugar, and 2 teaspoons cornstarch. Pour this over the crust layer.
For crumbled topping:
Squeeze the mixture together a bit with your hands to make larger crumbles here and there and sprinkle on top.
Bake:
On middle rack for about 40 minutes or until center is nice and bubbly and topping has browned.
Completely cool before cutting into squares.
