Cowboy Cookies
Ingredients:
2 cups All Purpose Flour
2 cups Old Fashioned Oats
1 cup Brown Sugar
1 cup White Sugar
1 cup (2 sticks) Butter
2 Large Eggs
1 tsp Vanilla
1 tsp Baking Soda
1/2 tsp Salt
1 cup nuts of your choice (I typically use walnuts and pecans)
1 cup chocolate chips (I typically mix milk chocolate with dark chocolate)
HOW TO MAKE THEM:
Preheat oven to 375°
Cream together: 1 c butter, 1 c sugar and 1 c brown sugar. Add 2 eggs to above mixture, one at a time. Add 1tsp vanilla. In separate bowl, mix together: 2 c flour, 1 tsp baking soda, 1/2 tsp salt.
Slowly incorporate the flour mixture to the sugar mixture, then add 2c oats. (I use old fashion oats. I think they are best for everything.)
Stir in about 2 cups chocolate chips plus nuts. Together the nuts and chocolate chips should be about 2 cups or less. I actually used less, but you can add to suite your own liking. I have found when using bittersweet chocolate, you don't need as much. Milk chocolate chips I am sure would be great too!
Drop by large spoons onto cookie sheet lined with parchment paper, and bake for about 12-14 minutes or until edges begin to brown. Don't over bake!
Cool on wire rack until cooled a bit, then thank God for his blessings, and gobble them down with a big ole glass of frigid whole milk. OH! And hide a few for a midnight snack, Cowboy! *wink
