Gooey Blueberry Cobbler Bars

March 10, 2018

My kids love cobbler! I take it to a lot of functions. Church, friend's houses, family get-togethers.  That is why I am so excited about this recipe.  Cobbler is that staple southern dessert that is sure to please every sweet tooth at the gathering, but bringing home that ooey-gooey casserole dish with remnants of left over baked on fruit is no fun at all. From now on I won't have to.  I'll be taking cobbler bars instead.  Yay!

Oh, and as far as I know, you can make these bars out of most any berry. I am not sure about using peaches or fruits that are heavier on the juicy side.  I would probably just stick with cleaning the pan for that one. Sorry. ~PJ

BLUEBERRY COBBLER BARS

Preheat Oven 350º

Prepare baking pan by covering with aluminum foil. Spray foil with cooking oil.

INGREDIENTS FOR CRUST:

1/2 cup (1 stick) butter

1 cup all purpose flour

3/4 cup oats

1/2 cup white sugar

1/4 cup brown sugar

1/2 tsp cinnamon

1/4 tsp salt

1 large egg yolk

melted butter

Mix all above ingredients together. Set aside 1 cup of the mixture but add 1 Tb brown sugar to it. (this will be the crumble topping) Press the remainder of mixture into the bottom of a 9x13 pan that has been covered with foil and sprayed with cooking oil.

FOR THE FILLING:

2 cups fresh blueberries

2 Tb lemon juice

1/4 cup white sugar

2 teaspoons cornstarch

Toss all of the filling ingredients together and pour over the crust layer.

FOR CRUMBLE TOPPING:

Squeeze the 1 cup mixture that you set aside together a bit with your hands to make larger crumbles and sprinkle on top.

Bake on middle rack of preheated oven for about 40 minutes or until center is nice and bubbly and topping has browned. Completely cool before cutting into squares.

ENJOY!
