3 Ingredients to Homemade Sourdough Starter: Flour, Water, Patience- DAY 3

Have you ever noticed day three of any good project seems to be magical? Look, we have bubbles! That is a clue that yeast is beginning to form and we are most likely going to have sourdough starter in this jar.  It doesn't have much sour smell to it yet, but I think it will soon.  Storing it in a place where the temperature doesn't fluctuate much seems to help a lot.  In my case, my office closet. haha  And also, I am lightly covering my jar with a coffee filter turned upside down to keep the dust out of it. 
Sometimes the flour and water begin to separate.  I am not sure why. Some folks throw away the hooch and I have as well in the past, but this time I am going to stir it back in just to know I am not throwing out any little yeasty babies. I should read up a bit on "hooch" I suppose.  When I learn more about it I will let you know, but for now, let's keep it.  Here's a picture showing the hooch below the bubbles. It's the stripe of clearer liquid sitting just below the bubbles. I hope the shadows from the sunlight is not confusing. 

In summary, Day 3 is a sourdough rock star! I am putting my jar back on the shelf in my office closet but will check on it a few times. I have seen sourdough get a burst of bubbling growth before, and I do not want a mess all over my chicken encyclopedia. I will check in on it to make sure it doesn't get a notion to grow clear out of the jar! Will update again tomorrow, Day 4.
